Corn Cakes (Betty's recipe)

1 cup cornmeal
1 cup flour
1/2 tsp salt
1/4 - 1/3 cup melted butter or oil
2 eggs
milk to make a thin pancake consistency (I use abt 2 cups)

Heat an oiled griddle. Betty made them half dollar size--filled each plate with lots. Delicious with jam, yogurt, and/or syrup.

Betty would bring the electric griddle out on her balcony overlooking the bay and make dozens of them for us to eat when we visited San Diego.

Huevos Rancheros

1 8 oz can tomatoes, cut up
Salsa
1/2 tsp. chili powder
1/4 onion, chopped
6 eggs
3/4 cups shredded Monterrey Jack or cheddar cheese

Brown onion with chili powder. Add tomatoes. Then break eggs into the mixture and scramble. Top with cheese. When cheese is slightly melted serve.

Pancakes

Scotch Pancakes

  • 2 beaten eggs
  • 1/2 cup powdered sugar
  • 1/2 cup melted butter (or replace half with applesauce)
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1 1/3 cups milk
Beat eggs, sugar and melted butter together. Then add dry ingredients and milk. These burn easily.

Serves 4

Imitation Maple Syrup

  • 1 cup sugar
  • 1 cup water
  • 1 Tbs. imitation maple flavoring
Heat the water until the sugar is dissolved. Then add maple flavoring.
