Banana Bread

BANANA BREAD!!!!



1 1/2 cups white flour
2 tsp baking powder
1/4 tsp salt
2 oz butter
3/4 cup sugar
1 tsp cinnamon
1 tsp vanilla
1 egg
2 mashed bananas
5-6 Tbsp milk





350 oven. Grease bread pan. Sift flour, baking powder, and salt. Cream butter and sugar. Stir in cinnamon, vanilla, egg, and bananas. Mix thoroughly. Add flour mixture gradually, alternating with the milk. Pour into pan. Bake 1 hour until toothpick comes out clean.

  1. I remember making banana bread with Erin when I was visiting them in West Virgina--she must have been about 4 years old. She didn't want to eat any of the finished bread because she thought the bananas were too slimy!

  2. I just remembered another banana bread story. When James, Stephen & I were little we made several loaves with mom. James dropped a metal spoon into his loaf but didn't want to tell anyone that he had done so--it wasn't discovered until dad cut a big piece.

  3. okay, other recipe time. I really need to figure out how to post recipes on here...but I'm not that smart. Judith, you ought to explain this to me...Anyway. Here you go


    Pineapple muffins!

    1 3/4 cup flour
    1/4 cup sugar
    2 1/2 tsp baking powder
    a pinch salt
    1 well-beaten egg (Beat it with a baseball bat, fork...whatever floats your boat)
    1 cup pineapple juice
    1/3 cup cooking oil

    Get your CD player, MP3, Tapes, Pandora, whatever and put on classic rock (60s-80s or perhaps early 90s)
    Preheat the oven to 400 degrees.
    Mix the dry ingredients together.
    Then Mix all the liquids together in another bowl.
    Make a little dent in the dry ingredients, like you use to do with mashed-potatoes and you put the gravy in or peas or whatever you stuck in your mashed-potatoes.
    Pour the liquid mixture into the little dent.
    Mix it all together
    Then mix in the TIDBIT pineapple. I guess you could use the big chunks but that's just gross.
    Put them into the well greased (what a gross word, greased.) muffin tin
    Take a large table spoon and put the muffin stuff into the tin.
    This recipe makes a dozen muffins. So feel free to adjust it to your family's needs. I give my permission. XD

    Anyway, they are delish, vegan AND LACTOSE FREE!though not glution free. Sorry Bethany.
